Recipe Round-Up 7.19.15

Hi friends,

Have you been enjoying your weekend? I was flying solo this weekend while Dave went camping. It's nice to have the time to myself with the pups, but I am looking forward to seeing him later this afternoon.

Meal Plan: Week of 7.18.15

Hi, friends!

It's time to share another meal plan with you. Last week, we stayed on track except for making nachos on Thursday since Dave wasn't feeling pizza. Having a plan has really been helping us stay in for dinner, which is helping the budget greatly.

This week's plan is based on what we've received in our Brown Box Veggies today...which involved a lot of greens so we're eating lots of salad this week.

A Few Cauliflower Ideas

I'm so excited that this weekend is a Brown Box Veggies weekend. Between being out of town last month and then Independence Day, it's been a whole month since we've had our fresh, local veggies in the house. Let me tell you that I am not a fan of buying produce at the grocery store anymore.


Anyway, one of the nice things is that they announce their Facebook page the week before what they intend to pack in the boxes. There are substitutions depending actual availability, of course, but you can general start planning early how you want to cook and eat your veggies.

This week, we're expecting this awesome haul:

  • cauliflower
  • carrots
  • collard bunches
  • sweet white corn 
  • Romaine lettuce 
  • purple hull peas
  • green bell peppers
  • cucumbers
  • fresh herb bunches
  • cherry tomatoes 
  • blueberries 
  • peaches
  • cantaloupes


Since cauliflower seems to be the challenge to use at my house, I thought I'd start hunting for ideas so that it doesn't go bad and wind up in the compost pile..

Bastille Day: Spinach, Tomato, Bacon Quiche

Bonjour, mes amis!

Yesterday was Bastille Day, aka the French Independence Day. Since I have a French degree, I decided we were celebrating by having quiche for dinner. If you saw this week's meal plan, you know that I was using a recipe from This Gal Cooks as a guide.

Though I followed the original recipe pretty closely, I did tweak a few things, such as using fresh spinach and subbing in a local gourmet salt. Here's the recipe including my modifications:

Spinach, Tomato, Bacon Quiche

9-inch pie crust
3 slices of pre-cooked bacon, chopped
2 cups fresh spinach, chopped
1/3 of Vidalia onion, chopped
4 large eggs
1 cup half and half
1/2 cup milk
1 cup shredded 4-cheese blend
1/2 teaspoon pepper
1/4 teaspoon L'Ecuyer's Gourmet Rosemary Salt
2 Roma tomatoes, thinly sliced

1. Preheat the oven to 350 degrees and bake the crust for 15 minutes.
2. Beat together the eggs, milk and half and half. Stir in the bacon, spinach, onion, cheese, pepper and salt.
3. Pour into pie crust and top with tomatoes. Bake for 45 minutes.
4. Cool on wire rack 15-20 minutes before serving.

The original recipe said this yields 8 servings, but I'm saying it only lasted for 4 servings at our house...it definitely went fast.

Easy DIY Succulent Gift

Last month, I was inspired by Kelly Christine Studios to create a potted succulent gift for my step-mother's birthday. It was such a fun and easy project that I had to share with all of you.

I got these at a local shop Gardener's Outpost. David knows the owner of the shop, but it was my first trip. We stopped in a few minutes before they were about to close; I plan to head back soon.

Since I didn't have quite the container that I wanted on hand, I headed to World Market to see what I could find. I thought I would use a teapot,  but these little soup crocks were on sale, so that's what came home with me.

David already had a collection of crystals and minerals that he let me rummage through and use as ornaments in the pots.

My step-mom has a pretty significant cactus and succulent garden at home, so we didn't put any drainage in the bottom of these containers. If you or your giftee tends to water a lot, you need to drill some holes in your container. Depending on what your container is made of, you made need a special drill bit.

This was the succulent we gave her for her birthday.

I simply re-potted the succulents in the crocks with potting soil and selected some pretty stones to add some color. Then, I misted them well with water and let them sit in the sunshine on the back patio.

Succulents are hardy little plants that are easy for even the blackest thumb to keep alive. The trick is to pretty much leave them alone. It's much easier to kill them from overwatering than not enough water.

They also need sun and lots of air to breathe; the other two I potted have been living on my patio table under the umbrella. When the weather gets frosty this fall, I'll move them to a sunny windowsill.

I have a confession, I haven't done a garden update in a while because we lost most of our tomato plants. It could be the heat or the monster puppy getting in the garden when they were first planted. That said, we're overdue for some sort of update. So here are the latest and greatest photos from the 'gram.

We've been trying to keep fresh flowers in the house. Most have been from the garden, but a Whole Foods bouquet sneaked in when they were on sale.
